Cheap & Quick Dinner???!!!
I was thinking we could post recipes for really cheap and quick dinners. pictures optional but would be nice
Here is one i did tonight...
made baked
cost is about $7 to make 2 mediums sized pizzas and you have leftovers
jiffy pizza crusts- 68 cents
pizza sauce- 98 cents (lots of leftovers)
bellpepper- 1.29 (lots of leftovers)
shredded cheese- 1.28 (lots of leftovers)
tomato-33 cents
olives- 68 cents
pepperonis- 2.39 (lots of leftovers)
directions to make is on the jiffy box and all the prep time really is is 5 minutes.
AWESOME FOR LAZY DAYS!

I like to pick up the roasted chickens at Sams Club -about $4.80 and make dinner with part of it, then use the left overs to make chicken salad sandwiches, chicken quesadilla & use the bones to make a chicken stock. keep in mind it is just me (of course the dog gets some too!) so i get a couple lunches & dinner out 1 chicken.

We like to buy a Whole Turkey (since we are a family of 4 and my son eats like a grown man now). But if you have a smaller family, do like Jersma does, buy a whole chicken and do the same with the chicken that I do with the turkey. I buy a 13 pound turkey for around $14 and can make 2 lunches and 3 dinners for my family. I can't get chicken here cheaper than that. Chicken for 3 dinners costs us around $15 and I still have 2 lunches to think about.
For the first night, we do a cheaper Thanksgiving type dinner with Instant Potatoes, Boxed Stuffing, and Broccoli.
For night 2, We use some on the leftover turkey and make Turkey and Broccoli Alfredo. You can get a box of pasta at Walmart for a little over a $1 (I use about 3/4 a box), Alfredo sauce for around $1.50 and Broccoli is $2, but we only use half, the other half we had with the turkey, night 1. So its really cheap, and my family LOVES this. Just cook you pasta like normal, heat your alfredo sauce in a pan, break up the turkey into smaller pieces, add it to the sauce and heat. I steam my broccoli (but you can stove cook it) and after I pour the sauce on the pasta, I throw the broccoli on top.
For night 3, we like to do Turkey Tacos. All of the taco ingredients are really cheap and its a great way to get your family in the kitchen with you creating their own tacos.
For the lunches, we do Turkey Sanwiches for 1, and Turkey Salads for the other. The Turkey Salads are really great because you use pretty much all of the same ingredients that you use for the Turkey Tacos minus The corn tortilla and sour cream. The Salads are a great way to use the rest of that Lettuce Head you would normally throw out because you just can't seem to use it all (Thats what always happens in my house) and the leftover tomatoes and onion.

oh how lucky!!!!! i love corn on the cob from the garden....actually anything from the garden!
today:
crab salad
imitation crab pack- $2.39
onion-.64 (leftover)
1 lemon- .36
1 bushel of cilantro- .68(leftover)
1 tomato-.33
tostada shells- 1.69 (leftover)
total: about $6
cut imitation crab into small chunks and put in bowl. cut lemon and squeeze into bowl(watch for seeds). mix and cut up 1 tomato into the bowl and chop desired amount of onion into bowl. then take 1/2 a bushel of cilantro and chop finely into bowl. mix all and then put salad on tostada shell.
this makes about 10 tostada crab salads.
